If you’re a lover of cream cheese frosting, this recipe takes it to a whole new level.  Cocoa powder gives this frosting irresistible richness while cream cheese balances the sweetness of the sugar.  It is smooth, creamy, and surprisingly easy to make with only 5 ingredients!  Try it on top of chocolate, vanilla, or red velvet cupcakes!

Can I use whipped/spreadable cream cheese? 

I do not recommend using whipped cream cheese in this recipe.  Since whipped cream cheese is lighter, you will end up with less cream cheese in the frosting overall and the flavor will not be the same.  You will also have a thicker, less smooth texture.

 

Does this recipe make enough frosting to frost a whole cake?

This recipe is made to frost 12 standard cupcakes.  If you are making a large cake, double the recipe to ensure that you will have enough frosting to cover the entire cake.

 

Can I use salted butter?

You can swap the unsalted butter with salted butter if need be, just leave out the ¼ teaspoon of salt that the recipe calls for if you do.

 

3 tips for the best possible frosting:

 

1. The longer you mix the frosting, the lighter it will become.  When you mix the frosting, you are whipping air into it so it it will become lighter and less dense.  For a denser frosting, mix for 4 minutes.  For a lighter and fluffier frosting, mix for 6-7 minutes.

2. Make sure the butter and cream cheese are thoroughly softened before you get started. If the butter and sugar are too solid, it will be very difficult to work them into the frosting.

3. Make sure to scrape down the sides of the bowl while mixing.  This will ensure that all of the sugar and cocoa powder is evenly combined in the frosting.

  • 4 tablespoons unsalted butter (½ a stick), softened
  • ¼ cup + 2 tablespoons cocoa powder
  • 1 ½ cups confectioner’s sugar
  • ¼ teaspoon salt
Directions:
  1. Combine all ingredients in the bowl of a stand mixture and mix for 5 minutes or until smooth and fluffy.  Scrape down the sides of the bowl every 2 minutes.
